Pounded yam is a popular dish - it is similar to mashed potatoes but heavier. Smooth and tasty it is often accompanied with a soup. Here is a special soup from the continent -  Okra soup, easy to make and it tastes great with the pounded yam.


For The Soup:

  • One pound okra fresh or frozen
  • ½ pound meat oxtail
  • ½ pound Shrimp
  • ½ cup medium –sized Onions chopped
  • ½ cup ground Crayfish
  • 3 cups of chopped Spinach
  • 1 tablespoon smoked paprika
  • 1 tablespoon red pepper flakes
  • Salt and pepper to taste

For The Pounded Yam:

  • 2 cups Island Sun’s Pounded Yam flour
  • 2 cup water


In a medium-sized saucepan boil oxtail seasoned with garlic salt, smoked paprika, pepper and onions until tender (approximately 30 -40 minutes). You can shorten this process in half by using a pressure cooker.

If using fresh okra wash the okra, remove the tops and tails, and slice into rounds.

Blend the okra to a coarse consistency in a food processor or you can finely chop the okra into coarse consistency using a sharp knife. Add to the pan.Fry for a minute.

Add the ground crayfish into the pan of boiled meat , cook for 5 minutes.

Then add shrimp, cook for another 5 minutes and finally add the spinach and stir for about a minute.

Pounded Yam

Bring 1 3/4 cups water to a boil on high heat.

Turn the heat to medium and stir in the pounded yam flour.

Keep stirring until it is smooth and soft. If it is really thick, add some hot water.

Serve hot with the pounded yam on plates and bowls of okra soup.
