Spicy Caribbean Sauce For Meat and Grills

This sauce can be used as an accompaniment to meats, seafood such as shrimp and grilled food. Enjoy!


  • 1 medium Onion
  • 3/4 cup celery
  • 3 cloves garlic
  • 1 tomato (optional)
  • 1.5 cups chicken stock
  • 1/4 scotch bonnet pepper
  • 1 teaspoon Worcestershire sauce
  • 1 bay leaf
  • 3 sprigs thyme
  • tablespoon butter
  • 1 can (70 grams) Gino Tomato Paste
  • 1/4 teaspoon salt
  • 2 tablespoons chopped parsley.
  • 2 tablespoon olive oil


Cut the onions, green pepper, scotch bonnet pepper and tomato into small pieces.

Mince the garlic.

In a large pan add the olive oil; when hot, add the onions. Fry for a minute. Add the peppers. Fry for 2 minutes.

Add the tomato and garlic. Fry for 2-3 minutes.

Now add all the remaining ingredients to the pan.

Cook for a minute, getting all the ingredients together.

Cover the pan with a lid. Simmer for 25 minutes till you get a thick sauce
