Soft and delicious sandwiches redolent of mint, mayo and green chutney...perfect for breakfast, an evening snack or even a picnic!


  • 6 Bread slices (sandwich bread)
  • 1 Cucumber, thinly sliced into rounds
  • 4 tablespoons Laila’s Mint-Mayo Sauce
  • 3 tablespoons green chutney(coriander and chillies)
  • Salt, to taste


Cut the edges of the bread to remove the crusts.

Place both the slices of bread on the surface, spread the mint-mayo sauce on one slice and green chutney on the other slice.

Arrange thin slices of cucumber over the mint-mayo sauce.Sprinkle crushed black pepper and salt to taste.

Cover the cucumber layer with another green chutney bread slice. Gently press the sandwich with your palm.

Cut diagonally into equal size triangles and serve.
