Almost every culture has their own version of grilled chicken. Filipino style chicken is marinated in vinegar, soy sauce and other spices. Filipino chickens are usually marinated in 7-up, lime soda or a sprite. But we haven't used any of these. What makes this recipe different is its unique ingredients for marination. Filipino food has unique taste thanks to its  flavors like salty-tangy soy-vinegar that blends excellently with chicken. Filipino chickens are known for their zesty combination of vinegar, soy sauce, garlic and other aromatics that complement meat. It is incredibly tasty and is served with rice.


  • 1/2 Cup soy sauce
  • 1 cup apple cider vinegar
  • 2 tbsp of teriyaki sauce
  • 1 tsp ground black peppercorn
  • 1/2 cup lemon juice
  • 2 minced garlic cloves
  • 1 tsp chilli powder
  • 2 tbsp sugar
  • salt to taste
  • 3 pounds of chicken, cut into pieces


In a large pot mix chicken, soy sauce, vinegar, teriyaki sauce, black peppercorns, lemon juice, garlic cloves, chilli powder, salt and sugar.

shake and toss all the ingredients until sugar is dissolved and chicken is thoroughly coated in the marinade.

Refrigerate the marinate upto atleast 4 - 5 hours. Once the chicken is marinated bring it to room temperature. 

Heat your grill and place the chicken piece directly on the heat, continue the process by flipping it on the bone side for about an hour until the chicken is completely cooked. 

Maintain the grilling temperature between 320 to 245 degrees. Check if the chicken is fully cooked by stabbing a knife or a meat thermometer to reach the temperature upto 165 degrees.

Remove from the grill and set aside for 10 minutes. Serve with rice.
