This is a classic South Indian combination that is a universal favourite. Laila Mixed pickle can be used to season, garlic bread, fries, chips, potato wedges too. It can also be used as a spicy dip.

Ingredients

  • Laila Basmati Rice – 1 cup
  • Plain Greek Yogurt – 200 gms
  • Plain unsalted butter – 1 tbs
  • Salt to taste
  • Laila Mixed Pickle

Method

Wash the rice 3-4 times until the water runs clean. Boil the rice in 2.5 cups of water. For the curd rice, the rice should be slightly over cooked. Cook the rice in a covered vessel. Keep stirring every 3 minutes. When the water level goes down, reduce the stove temperature so that the rice does not burn in the bottom.

Once the rice is soft up to the centre, take it off the stove. Mash it with a flat spatula. Add the butter and mix. Let it cool partially, add salt to taste and the yogurt and mix well till it coats the rice evenly. Serve the warm rice with the Laila Mixed pickle. To add texture to the yogurt rice, you could also add, a few pieces of grapes, pomegranate seeds and / or cucumber and raw mango finely chopped.
