Sesame, Cilantro Chilli Rice

  • 3 cups AAA Lucky 8 Jasmine Fragrant Rice
  • 3 tablespoons vegetable oil
  • 1/3 cup finely chopped peeled fresh ginger
  • 1 tablespoon garlic cloves, minced
  • 1 green chili finely chopped
  • 1 tablespoon sesame seeds
  • 4 1/2 cups low-salt chicken broth
  • 3/4 teaspoon salt
  • 1 large bunch fresh cilantro, coarsely chopped leaves only
  • 5 tablespoons of sesame oil


Wash rice in a large bowl 3-4 times by running your hands in it until the water runs clear.

Combine rice, 1 tbs sesame oil and chicken broth in a saucepan; bring to a boil stirring intermittently. Reduce heat, add the salt, cover and simmer 10 minutes or until rice is tender and water is absorbed. Spread the rice in a large plate and gently separate them.

While rice cooks, heat the rest of the sesame oil in a large nonstick skillet over medium-low heat. Add ginger, garlic and sesame seeds; cook 2 minutes or until lightly browned, stirring constantly. Add chilli and cook another 30 seconds. Take the skillet off the heat and add the cilantro leaves and stir.

Add the mix to the rice and gently mix. Serve with your favourite curry or just pickle.
