Jamaican cuisine has been adapted by African, Indian, British, French, Spanish, Chinese influences. Popular Jamaican dishes include curry goat, fried dumplings, ackee and saltfish (cod) – the national dish of Jamaica – fried plantain, "jerk", steamed cabbage and "rice and peas" (pigeon peas or kidney beans). Here we are sharing a recipe made with Black beans, coconut milk and rice.

Ingredients

  • Island Sun Brown Beans- 1 and 1/4 cups
  • Island Sun Coconut Milk - 1 cup
  • Fresh thyme - 1 sprig
  • Minced garlic - 1 teaspoon
  • Green onions, chopped - 1/8 cup
  • Hot red chili pepper - 1
  • Island Sun Easy Cook Rice - 2 and ¼ cups
  • Salt to taste
  • Oil – 2tbs

Method

Soak beans overnight or for 6 hours. If you want to soak them faster, you can use hot water to soak the beans. Combine beans, coconut milk and 2 1/2 cups of water in a cooker. Cook on high flame until you get three whistles. Then lower the flame and cook for another 20 minutes. Soak the rice in water for half hour. Rest the cooker for another 20minutes and open when cool.

In a pan heat the oil. Sauté the garlic, onions and 3 slices chili pepper and add to the boiled black beans and simmer for 7 minutes after stirring in the thyme.

Stir in the soaked rice, salt and add one cup of water and bring to a boil. Reduce heat, cover and simmer for 25 minutes, or until all liquid is absorbed and rice is tender.
