This Oxtail & Butter Beans Recipe is a classic Caribbean dish. It is comfort food at its best and it is a hearty meal made with affordable ingredients. A wonderful combination of Caribbean ingredients turns into a very flavourful meal! Pour the beans over white rice or have as a soup or eat with breaded thin steaks.


  • Beef oxtail, cut into pieces -1 pound
  • Large onion, chopped -1
  • Green onion, thinly sliced - 1
  • Cloves garlic, minced -2
  • Fresh ginger minced- 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Fresh thyme, chopped - 1 spring
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 1/2 cups water
  • Island Sun Butter Beans - 1 cup
  • Whole all spice berries - 1 teaspoon
  • Cornstarch - 1 tablespoon


Soak the Butter Beans overnight or for 6 hours. Then pressure cook them in a cooker. Switch off after one cooker whistle. Grind the onions with the garlic, scallions, and chili into a smooth paste and mix with soy sauce. Add oxtails with salt and pepperto the paste and marinade for 4 hours.

Heat the oil in a large pan. Remove the oxtails from the bowl and shake the extra marinade away and fry in the pan. Cook, turning once, until browned for about 12 minutes. Set aside the fried oxtails in a plate.

Cook the marinade in the pan, stirring, until softened and caramelized for about 8 minutes. Add the oxtails to the pan along with 4 cups water and bring to a boil. Transfer the oxtails to the cooker and cook until the meat is tender.

Open the cooker after it has cooled. Stir in the pearl onions and carrots and cook, stirring, until tender for about 15 minutes. Add water if required. Stir in the butter beans and cook until warmed through, about 2 minutes. Remove from the heat and let the oxtails stand for 5 minutes before serving.
