Chicken satay…the mere mention of the two words conjures up a mental picture of perfectly grilled and nicely charred chicken marinated with exotic spices and served with the addictive peanut sauce, with a side of cucumber. Chicken satay is one of the most popular Asian appetizers. There are many variations of chicken satay recipes from Asia but the best satay comes from Malaysia.


  • Lobo Satay Seasoning Mix – 1 packet (100g)
  • Chicken Thigh, cut into strips - 1 kg
  • Shallots, coarsely chopped - 4 (150 g)
  • Lemongrass (white part), coarsely chopped - 3
  • Salt - 1 tsp
  • Oil - 1 small cup
  • Cucumber, coarsely chopped - 1/4
  • Red onion, cut into wedges - ½


Blend shallots, lemongrass until it becomes a smooth paste. Mix the paste with chicken and the Lobo Satay Seasoning Mix, salt and 2 tablespoon oil and combine well. Cover with glad wrap and marinate in the fridge for 2hrs or overnight if you can.

Soak skewers in water while you are marinating chicken to prevent them from burning.

Thread the chicken onto the skewers and brush oil on top.

Grill in oven for couple of minutes on each side or you can use grilled pan / BBQ to cook!

Serve with cucumber and red onion along with peanut sauce.
