Quick, easy and snazzy, the Mexican Fried Rice is a recipe that will strike the right chord with everyone. The peppy taste and strong aroma of garlic along with the heat of the chillies and the tang of tomatoes makes this a really delectable treat for your palate. It takes just a few minutes to prepare once your rice is cooked and is the perfect side dish for any Mexican entrée.


  • Island Sun Easy Cook Rice - 2 cups (approx.. 200 gms)
  • Chicken broth or stock - 4 cups
  • Butter - 2 tbsp
  • Large yellow onion - 1
  • Garlic - 6 cloves
  • Tomatoes –8 (750 gms)
  • Red chilli powder – 1 tsp
  • Cumin - 1 tbsp
  • Smoked paprika - 1 tbsp
  • Salt, to taste
  • Fresh cilantro, chopped for garnish


Rinse the rice a few times until the water runs clean. In a large skillet, combine the rice and the chicken broth and bring to a boil. The broth should be 4 ½ cups. Reduce heat to a low simmer and cover with lid. Simmer for 18-20 minutes stirring occasionally, until the rice is soft. Alternatively, you can also cook the rice in a cooker. If you are using cooker, use only 4 cups of water or broth to cook 2 cups of rice. Transfer the cooked rice to a separate dish and cover with lid to keep warm.

Melt the butter in the hot skillet over medium high heat. Sauté onions until translucent and slightly browned, approximately 5-6 minutes. Add garlic, toss to sauté and cook about a minute longer. Add the tomatoes and the spices and stir. Cover with lid and simmer on medium low for 10 minutes.

Add the cooked rice to the tomato mixture and stir well to combine thoroughly. Turn off heat and cover with lid to keep warm. Garnish with cilantro just before serving. Enjoy!
