Black Pilaf for Halloween

We have given the traditional pilaf a black twist to make it a great dish to serve for Halloween. With all black ingredients, the pilaf makes a great treat to your eyes and palate. Serve it with your favourite sauce or curd.


  • Olive oil - 1 tsp
  • Onion,chopped - 1
  • Garlic, minced - 2 cloves
  • Laila xtra long grain rice - 3/4 cup
  • Low sodium, low fat vegetable broth - 1 1/2 cups
  • Ground cumin - 1 tsp
  • Cayenne pepper - 1/4 tsp
  • Canned black beans, drained - 3 1/2 cups
  • Black olives – 1/2 cup
  • Raisins – 2 tbs


In a stockpot over medium-high heat, heat the oil. Add the onion and garlic and saute for 4 minutes. Add the rice and saute for 2 minutes.

Add the vegetable broth, bring to a boil, cover and lower the heat and cook for 20 minutes or until rice is soft. Check water levels and ensure the rice does not burn at the bottom. Add the spices and black beans, black olives and raisins. Serve hot.
