Noodles and Peanut Butter are both comfort foods which we turn to when we need good food that satisfies. This easy to cook recipe has combined two all-time favourites ingredients and makes a wonderful dish that is nourishing and tasty.


  • My Thai Rice sticks 5mm – 1 packet (400 gms)
  • Island Sun Smooth Peanut Butter –1/4 cup
  • Warm water –1/3 cup
  • Low-sodium soy sauce –1/4 cup
  • Cider vinegar – 2 tbs
  • Sugar – 4 tsp
  • Diced vegetables of your choice – Carrots, Broccoli, Beans - 1 cup
  • 2 teaspoons red pepper flakes
  • Boiled Chicken – 1 cup


Cook the rice sticks using the directions on the package. Prepare sauce and veggies while pasta cooks.

In a medium size bowl, combine peanut butter and warm water. Stir into a smooth, thin sauce.Add soy sauce, vinegar, and sugar. Mix until sugar dissolves. Stir in red pepper flakes.

In a microwave-safe bowl, add veggies and ½ cup water. Steam in microwave for 3-5 minutes. Drain any excess water. Stir in the boiled chicken pieces.

Pour peanut sauce and steamed veggies over cooked, drained pasta. Toss to combine. Serve warm or cold.
