  • Chicken breasts–2
  • Red bell pepper – 2 (optional)
  • Soy sauce - 3tbsp
  • Egg - 1
  • Pepper - 1/4 tsp
  • Flour - 3 tbsp
  • Cornstarch -4tbsp
  • Corn or canola oil for deep frying
  • Dayat Pineapple chunks - 1 cup
  • Pineapple juice -1 cup
  • Brown sugar - 1/4 cup

Cut 2 chicken breasts into bite size pieces. Add soy sauce, sesame oil, pepper and egg. Mix thoroughly, cover and let marinate in fridge for at least 2 hours.

Add flour and cornstarch to chicken to create a thick batter. Fry chicken on medium heat oil until chicken is browned. Turn to ensure it is cooked uniformly on all sides. Soak excess oil with kitchen towel.

In a medium saucepan, combine pineapples and pineapple juice. Bring to a boil then add brown sugar and soy sauce, and simmer for 5 minutes. Add cut bell pepper pieces if you are using them.

In a small bowl, mix cornstarch with 1 tbs water to make a paste. Pour into sauce and stir until thick enough to coat a spoon. Add chicken pieces into the sauce and mix until the sauce thoroughly coats the chicken pieces. Serve with steamed white rice.
