With JF Mills White Cake Mix making Simnel cake becomes quite easy with the cake making portion simplified.


  • JF Mills White Cake Mix – 1 packet
  • Caster sugar -250g/9oz
  • Ground almonds - 250g/9oz
  • Eggs - 3
  • Almond essence - 1 tsp
  • Ground mixed spice (optional) - ½ tsp
  • Mixed raisins, currants and sultanas - 350g/12oz
  • Chopped mixed Peel - 55g/2oz
  • Grated zest of ½ lemon,
  • Apricot jam - 1-2 tbsp


First prepare the Almond paste by mixing the caster sugar and ground almonds. Beat two eggs until fluffy and mix in the almond and sugar along with the almond essence, until it becomes a smooth, soft paste.Use about 1/3rd of the almond paste to roll out a circular almond paste layer that is the same size of the cake tin. Use the rest for cake topping.

Prepare the JF Mills Cake mix as instructed. Add the mixed dried fruit, peel and grated lemon zest and stir into the mixture. Pour half the cake mix into the cake tin. Cover the top with the almond paste sheet and pour the rest of the cake mix over it.
Preheat the oven to 140°C and bake the cake for around 90 minutes. Check the middle with a skewer and if it comes out clean, the cake is done. If not, the bake for 15 more minutes. Cool the cake.

Add a thin layer of apricot jam on the cake. Spread half of the almond paste on the cake and make 11 small balls with the last part of almond paste. Place the almond paste balls on the edge. Beat the 3rd egg and brush the cake top with the beaten egg.

Preheat a grill to maximum and place the cake in it for 90 seconds until the top of the marzipan begins to brown. You could also use a chef’s blowtorch to heat the cake lightly until you get a golden brown marzipan.
