When you are on the run, you will find that there is no better way to start the day than dig into some wholesome pancakes, made with whole wheat flour and blended well with Island Sun’s fine cornmeal! So get ahead, put on the pan and kick-start the day!



  • ½ cup rolled oats or oatmeal
  • 1 cup whole wheat flour
  • ¼ cup Island Sun’s cornmeal fine
  • 3 tablespoons flaxseed powder(optional)
  • 3 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1 beaten egg
  • 1 cups buttermilk
  • A pinch of salt
  • Cooking spray or oil


Take a large bowl. Stir in the oats, wheat flour, cornmeal, flaxseed powder, brown sugar, salt and baking powder. Slowly beat in the buttermilk and egg. Make a free-flowing, smooth batter.

Heat a large pan or skillet. Apply some oil or spray. On medium heat, drop spoonfuls of the batter.Cook until bubbles begin to form. When the edges are dry flip the pancake over to the other side. Brown on both sides.

Repeat with the remaining batter. Serve hot with toppings of your choice - maple syrup, yoghurt or berries.
